Meet the owner

When Inez Cook went to Kelowna’s wine festival and popped into a fantastic local First Nations restaurant, little did she know that her experience on that trip would be the catalyst for an amazing adventure that’s still full of surprises.

At the time there weren’t any First Nations restaurants in Vancouver, which Inez thought was simply “ridiculous,” a sentiment shared by her partner, Remi Caudron. They discussed the possibility of creating a place to highlight First Nations cuisine in the city but soon realized that two major hurdles stood in their way — they both worked extremely busy schedules as flight attendants, and neither of them knew anything about the restaurant business — so they set the idea aside.

They may have tucked it away but the dream was still alive and well, so when Inez learned that a friend’s daughter, who had a small restaurant, was looking for someone to take over the space, “It felt like it was meant to be.”

Inez Cook, a member of the Nuxalk First Nations, opened Salmon n’ Bannock in 2010 to bring a taste of tradition to Vancouver’s dining scene. Serving up freshly baked bannock, an aboriginal staple bread, the 30-seat restaurant also specializes in wild fish and free-range game. Diners can also sip on a glass of award-winning wine from Nk’Mip Cellar; a First Nations owned and operated winery in the Okanagan.
