To make a dream come true, one has to be eager to learn, not be afraid to hang on, and have the drive to go for it. That's what the chef and owner of Bistro Grace on Antoine-Faucon Street in Pierrefonds did to make his dream come true.
During his 25 years of experience in catering and more than 18 as a chef, Paulo Fraga familiarized himself with all aspects of the profession. "I became a chef on the job. I learned a lot by being interested in what the chefs were doing and by asking questions," he says. Always passionate about cooking, Paulo also read cookbooks and watched different shows that could help him to perfect his art.
Bistro Grace is the third restaurant the chef has opened in his career, and he named it in honour of his daughter, Grace. Its mission is to offer traditional and authentic bistro cuisine. "Cooking is my life. I still love it and I'm still passionate, even after so many years."
