There's nothing more refreshing on a hot summer day than a sweet fruit dessert. Not only are they perfect for entertaining, they're also easy to make and full of healthy vitamins. Give these two recipes a try the next time you need an idea.

1. Pineapple foster

Bananas Foster is a beloved New Orleans dessert, created in the 1950s at Brennan's Restaurant. This pineapple variation, in which the fruit is a good source of vitamin C, will bring raves. The frozen yogourt adds calcium as well as a cool taste contrast.

Preparation time: 15 minutes

Cooking time: 10 minutes

Serves 4

  • 20 ml (4 tsp) unsalted butter
  • 45 ml (3 tbsp) packed light brown sugar
  • 1 ml (1⁄4 tsp) ground nutmeg
  • 6 slices (1.75 cm/3⁄4 in) fresh pineapple, cored and cut into quarters
  • 45 ml (3 tbsp) dark rum
  • 30 ml (2 tbsp) Grand Marnier, or other orange liqueur
  • 325 ml (1 1⁄3 c) vanilla frozen yogurt1. In a large skillet, melt butter over moderate heat. When it begins to foam, add brown sugar and nutmeg, and heat until sugar has melted. Add pineapple and cook, tossing often, four minutes or until pineapple is warmed through.
    2. Remove pan from heat, sprinkle rum and Grand Marnier over pineapple, and ignite alcohol with a long match. Return pan to heat and shake until alcohol burns off.
    3. Serve pineapple slices and sauce with the frozen yogurt.Calories: 280, fat: 5 g, saturated fat: 3 g, sodium: 35 mg, carbohydrate: 48 g, protein: 5 g.

2. Caramelized orange compote

Oranges are a prime source of vitamin C;here's a way to dress them up.

Preparation time: 10 minutes

Cooking time: 2 minutes

Serves 4

  • 4 peeled and segmented navel oranges
  • 50 ml (1⁄4 c) brown sugar
  • 1 ml (1⁄4 tsp) cinnamon
  • 15 ml (1 tbsp) slivered orange zest1. Preheat broiler. Place peeled and segmented navel oranges in gratin dish or shallow broiler-proof baking dish.
    2. Sprinkle with brown sugar, cinnamon and zest. Broil two minutes or until sugar melts.Calories: 120, fat: 0 g, saturated fat: 0 g, sodium: 5 mg, carbohydrate: 30 g, protein: 1 g.
