Chocolate changes lives. At least, that was the case for Karine Guillemette. Karine had studied education and chosen French as a second language as her specialization. Her roommate at the time offered her a taste of Valrhona chocolate, a gastronomic chocolate from France. "I'd never tasted anything like it and my curiousity was piqued!” says Karine.
Since her work was contractual and her schedule flexible, Karine set off to visit cacao plantations and chocolatiers in the US, Europe, Asia and South America, discovering the ins and outs of artisanal chocolate production. Soon one thing was clear: chocolate was her real passion.
While at SAJE, a local entrepreneurship organization, Karine happened to meet Jacques Dussault, who'd left a career at Ubisoft to launch a commercial coffee service. They teamed up to offer specialized workshops, events and chocolate tastings. It was in 2013 that the two of them began to ponder the idea of opening a boutique to champion the cause of artisanal chocolate. La TABLETTE de Miss Choco opened its doors in 2014 to initiate Montrealers into the wonderful world of bean-to-bar chocolate.
